The Teeling Whiskey Distillery is the first new distillery in Dublin for over 125 years. Located in the heart of Dublin City Centre, our distillery is a fully functional pot still distillery producing up to 500,000 litres of spirit each year. With the opening of the distillery came the opportunity to fully control the entirety of the production of Teeling Whiskey.
We are able to truly innovate and are crafting unique whiskeys through innovative mash bills, fermentation and distilling techniques. Open to the public and easily accessible for any visitor to the city come experience how a real distillery operates. NEW GENERATION OF DUBLIN DISTILLERS
Our distilling team, led by Master Distiller Alex Chasko, is made up of a group of young distilling enthusiasts. They each carefully monitor every step of the distillation process to ensure that only the highest quality of spirit leaves our distillery. Every aspect of the milling, mashing, fermenting and distilling is attentively monitored by our distillation team. Their restless innovative spirit shines through in the distilling techniques we employ and the flavoursome whiskeys we strive to consistently produce. Here at the home of the Spirit of Dublin, we let the liquid do the talking, and our liquid has plenty to say.
PROGRESSIVE DUBLIN DISTILLING
Here at the Teeling Whiskey Distillery we strive to push the boundaries of Irish whiskey within the well-defined confines of age old traditions. From the use of a range of unique raw materials, including re-imagined old Dublin porter recipes and traditional blends of un-malted and malted barley, we are striving to create a unique range of expressions to surprise Irish whiskey drinkers.
We have even developed our own proprietary fermentation techniques which involves our unique blend of yeast strains and the use of open wooden vat and closed stainless steel fermentation, producing a truly flavoursome wash which gets distilled in our distinctive old Dublin distillery inspired pot stills named after Jack Teeling three daughters producing a spirit of a truly unique character.
Our whole distillery was designed to be flexible to allow for runs of various different types and we are dedicated to allowing up to 25% of our annual production to trying new things.
DEEP DUBLIN ROOTS
Located in the heart of the historic Liberties, against the backdrop of a city steeped in whiskey history, the Teeling Whiskey Distillery opened its doors in 2015 as the first new distillery in Dublin for over 125 years. Once home to over 37 distilleries, Dublin is no stranger to the craft of whiskey making. We are proud to have brought the tradition of distilling back into the heart of Dublin city centre with the opening of our distillery, distilling is in the fabric of our city and our family. For us, this is more than a beginning, this is a revival.
Originally established outside the city walls in the early 12th century, The Liberties were a law unto themselves. Officially dissolved in the 19th century, even today, The Liberties maintains an unmistakeably independent spirit. New and dynamic enterprise echoes the crafts of the past – the old cobbled streets remain, as new paths are forged. Free and plentiful access to water in the area encouraged industry and progress. The skilled Huguenot immigrants of the 17th century introduced the artisan crafts of silverwork, silk and wool weaving, followed by the brewing and distilling giants of the early Victorian era.
The chimney stacks and windmills of powerhouses such as the Guinness, Powers, Jameson, Millar and Roe families dominated the skyline of the 1800’s. In their shadow around Newmarket stood Watkins Brewery of Ardee Street, Busby Distillery of Fumbally Lane– and the Teeling’s of Marrowbone Lane.
Today, the Liberties is experiencing a revival. Untouched by the excess of the boom times of “The Celtic Tiger”, the neighbourhood’s roots are beginning to flourish once again. Design studios sit nestled between ancient weavers workshops, artisan food cooperatives are evoking a new local spirit and, reimagining a heritage gone before, whiskey is being distilled at Newmarket once again.
