We have seen some seriously exciting changes at the Teeling Distillery, Newmarket over the last couple of weeks and what better way to celebrate then to share some behind the scenes shots to whet the whiskey appetite!
We have now received in all the elements needed to create the first new working distillery in Dublin in over 125 years, the wash backs, copper pot stills, lauter tun, fermenters, wet mills, spirit safe (along with all the pipework that goes with it!) have all taken pride of place in their new home. These elements will help us to create our signature liquid, will guarantee future supply for the Teeling Whiskey brands and allow the continued creation of our range of innovative and authentic Irish whiskeys. Right now, we have engineers on site working to ensure that all of the pipework visible in the shot above is ready for distilling at the end of February, it’s all getting very real over at Teeling HQ!
Why are our copper pot stills so important? Tried and tested over generations of Irish whiskey production, copper plays an important role in removing the sulphur within the new make spirit, removing any potential for harsh or firey whiskey. Our stills will act to purify our liquid, their traditional, olive shape with elongated, wide neck creating more reflux and thus more tasty Teeling! Our visitor centre is on course to open in May 2015, with our first visitors already booked in for tours!! The wild weather has been playing havoc with our roofing but we’re due to see the raising of the roof over the next few days. We can’t wait to open up our experience to everyone looking to see the true Spirit of Dublin and celebrate Dublin whiskey at its finest.
