National Cocktail Day – Time for a Teeling Whiskey Special!

This past week our new Global Brand Ambassador, Robert Caldwell, has been hard at work to create a unique and innovative signature cocktail. Robert is taking over this segment of the Teeling Times to explain the story behind his Small Batch Saison and give everyone the chance to try his signature cocktail on National Cocktail Day.

After a day in the Teeling Whiskey Distillery with Master Distiller & Blender Alex Chasko, I was inspired by the tale of his route into the Whiskey industry and his ambition to parallel the rise of craft beer in Portland Oregon with Irish Whiskey. I decided to put together a drink inspired by that passion.

Taking the very versatile Teeling Small Batch, I knew I wanted to make a version of the famous Whiskey Sour but different enough to be unique. I planned on achieving this by adding hopped elements to mirror that of a sour style beer like a German Gose or Saison.



I wanted to keep it relatively simple and relatable. By removing the egg white, I eliminated the meringue mouthfeel of the drink which I did not want. By trading out Angostura bitters for Bittermens Hopped Grapefruit Bitters I was a great deal closer to where I wanted to be. The Whiskey still shone through, with the 46% ABV of the Small Batch helping it to stand out, however the sugar syrup gave off an artificial metallic note that wasn’t working with the bitters.

I decided to use a muscovado sugar instead of plain white as I knew the fig and dark fruit notes of the softer brown sugar would pair very well with similar notes in the Small Batch. This is due to the Central American Rum Cask the Whiskey is married in.

I was now almost there, however had run out of time and had to be in Stuttgart, Germany the following day. I was due to make the drink at a bar called Paul & George that evening but wasn’t 100% happy with it quite yet. It was the staff there that helped the drink over the finish line. They achieved this by introducing an IPA into the sugar syrup bringing back some of the lost hop flavours.

It turned out the be the best seller that evening and I’m looking forward to using it again in another bar takeover in the near future.




2 oz Teeling Small Batch
1 oz lemon juice
½ oz IPA syrup (2 parts Muscovado, 1 part IPA, 1 part water & reduced slightly)
3 dashes of Bittermens hopped grapefruit bitters.
