We’re the first distillery to open in Dublin city for 125 years, yet whiskey making flows through our family’s veins – over two centuries of it. It’s our deep Dublin distilling roots that give us confidence to do things differently. Dublin distillers, back in the last golden era for Irish whiskey, were made famous by perfecting the use of unmalted barley and triple distillation. The first release from our new distillery pays homage to this famous Dublin style of Irish Whiskey. Our Single Pot is crafted using a recipe of 50% unmalted spring barley and 50% malted barley which is triple distilled and matured in a combination of virgin oak, ex-wine and ex-bourbon barrels. This is not how everyone makes Irish whiskey – it’s our way. That’s the Spirit of Dublin.
